What could be better than beetroot on hot days and in the season of fresh vegetables? It is good cold or hot, with sour cream or herbs, with and without meat. We have collected 12 gorgeous recipes in one selection so that it is more convenient for you to find your ideal one!
1. Beetroot with chicken
The soup is very easy to prepare, even with the simplest ingredients.
You will need: 300 g chicken, 3 potatoes, 1 carrot, 3 beets, 1 onion, 0.5 tsp. vinegar, a pinch of sugar, 1.5 tsp. tomato paste, spices.
Preparation: Pour the chicken with water, bring to a boil, and immediately add the peeled whole beets to the boiling broth. After 25 minutes, add the potato cubes, and when everything is cooked, fry the onions and carrots with tomato paste. Take out and chop the beets, put them back in the soup, add vinegar, sugar and spices, and after 10 minutes remove the beetroot from the heat.
2. Beetroot with beef and pepper
Great lunch or dinner for the whole family!
You will need: 500 g of beef, 4 potatoes, 3 beets, 2 carrots, 1 onion, 5 tomatoes, 2 peppers, spices.
Preparation: Boil the meat until cooked, and during this time cut the beets, carrots and peppers into strips, and grate the grated tomatoes. Add potatoes to the broth, and stew the rest of the vegetables along with chopped onions until soft. At the very end, add tomatoes to the frying, and send it to the broth to the finished potatoes. Season the beetroot and boil for another 5-7 minutes.
3. Beetroot with meatballs
There are no potatoes or cabbage here, but it turns out very satisfying.
You will need: 300 g minced meat, 500 g beets, 1 carrot, 2 onions, 1 egg, 1 tbsp. tomato paste, 1 tbsp. vinegar, spices, garlic, herbs.
Preparation: Boil the beets in advance, and during this time grate 1 onion, mix with minced meat, egg and spices, and shape the meatballs. Chop the remaining onions, carrots, garlic and herbs and fry until golden.
Add tomato paste and simmer for a couple of minutes. Put the meatballs in boiling water, and after a couple of minutes add the grated boiled beets and fry. Boil everything together under the lid for 40 minutes.
4. Beetroot without meat
Wonderful vegetarian beetroot with a minimum of calories.
You will need: 300 g beets, 200 g potatoes, 100 g carrots, 60 g onions, 150 g cabbage, spices.
Preparation: Cut the potatoes into cubes and the carrots and beets into strips. Fry chopped onions until soft, add beets and carrots to it, add a little water and simmer for 30 minutes.
Then add cabbage and carcass for another 20 minutes. Pour in water, bring to a boil, and send potatoes to the beetroot. When it's done, remove the soup from the heat and season.
5. Beetroot with dumplings
Beetroot with dumplings turns out to be much more satisfying than usual vegetable.
You will need: 0.5 cups flour, 1 egg, 0.5 cups boiling water, 5 potatoes, 3 beets, 1 carrot, 0.5 tbsp. vinegar, 1 onion, 1 liter of broth, spices.
Preparation: Finely chop the onion and carrots, fry until soft and add the chopped beets. Pour in vinegar, season the dish and stew a little all together. During this time, boil the potatoes in the broth, and send the frying to it. After 10 minutes, remove the soup from the heat and season.
Mix flour, egg and boiling water, beat with a fork and put dumplings in water in a separate saucepan. Boil them for 3-4 minutes, and send them to the beetroot just before serving.
6. Beetroot with sauerkraut
Common cabbage is often used in beetroot, but we suggest trying sauerkraut.
You will need: 150 g sauerkraut, 2 beets, 1 carrot, 1 parsley root, 0.5 lemon, spices.
Preparation: Grate beets, carrots and parsley root on a coarse grater. Pour vegetables with water and boil for 20 minutes after boiling over low heat. Add cabbage, spices and lemon juice and boil for a couple of minutes.
7. Beetroot with rice
This beetroot is best served hot and with herbs.
You will need: 1 liter of broth, 1 pepper, 1 tomato, 2 beets, 2 tbsp. rice, 2 cloves of garlic, spices.
Preparation: In the boiling broth, send rice and beets grated on a coarse grater. Finely chop the rest of the vegetables, and after 5 minutes, also send them to the pan. Cook everything together for about 25 minutes, and at the end add the crushed garlic and spices.
8. Beetroot with egg
And this is the perfect cold option!
You will need: 30 g greens, 1 egg, 1 cucumber, 4 beets, 0.5 lemon, 2 tbsp. sugar, spices.
Preparation: Grate the beets on a coarse grater and boil for 20 minutes in boiling water until soft. Add lemon juice, sugar and spices, and cool the broth. Finely chop a fresh cucumber and boiled egg, and cover with beetroot infusion.
9. Beetroot with beans
We recommend using canned red beans in tomato sauce.
You will need: 3 beets, 2 onions, 2 tomatoes, 1 tsp. sugar, 2 liters of broth, 250 g of beans, 1 tbsp. vinegar, 5 potatoes, 1 carrot, spices.
Preparation: Chop the onion finely, fry until soft and add the peeled chopped tomatoes to it. Sodium beets on a coarse grater, pour a glass of water, add sugar and vinegar, and cook for 30 minutes.
Boil the potatoes in boiling broth, and after 10 minutes add the carrots. When the vegetables are almost ready, add the fry, beets, washed beans and spices, and after a couple of minutes, remove the beetroot from the heat.
10. Beetroot with fish
The original Baltic recipe for beetroot soup with smoked fish.
You will need: 500 g of smoked fish, 3 beets, 2 apples, 2 cucumbers, 1 bunch of green onions, 3 eggs, greens.
Preparation: Boil the beets until tender and chop into thin strips. Boil the fish for 2 minutes in boiling water and disassemble it into pieces. Hard-boiled eggs and chop finely, and cut cucumbers and apples into cubes. Put all the ingredients in bowls, add the broth and sprinkle with herbs and green onions.
11. Beetroot with mushrooms
Mushrooms can be taken fresh or pickled.
You will need: 3 beets, 3 potatoes, 1 onion, 2 tomatoes, 150 g of mushrooms, spices, 1.5 l of broth, 1 carrot, greens.
Preparation: Put the potatoes in the broth. Finely chop the onion, grate the carrots, and also send to the pan. After a couple of minutes, add the grated beets, and after a couple more - the mushrooms cut into slices. At the very end, add grated tomatoes, boil everything until vegetables are ready, season and sprinkle with herbs.
12. Beetroot with kefir
Classic cold soup for the summer.
You will need: 250 g of beets, 2 cucumbers, 2 eggs, 2 bunches of greens, 0.5 cups of kefir, 1 tsp. mustard, spices.
Preparation: Bake the beets until tender, let cool and grate. Likewise, grate cucumbers and finely chop the boiled eggs and all the greens. Add mustard and spices, mix and pour cold kefir and boiled water to the desired consistency.
