Lightly salted cucumbers are a traditional appetizer of any Russian table. They are served hot, added to salads or sandwiches. Each housewife has a proven pickling recipe, but we have selected 20 of the best of them!
1. Quick lightly salted cucumbers in a bag
While the cucumbers are salting, take them out of the refrigerator every hour and shake them.
You will need: 1 kg of cucumbers, 1 tbsp. salt, 3 cloves of garlic, 2 peas of black and allspice, half a bunch of dill.
Preparation: Cut the ends on the cucumbers and cut them lengthwise into quarters. Chop the garlic and herbs. Put cucumbers, peppercorns, garlic, dill and salt in a bag. Tie the bag and shake well to distribute the salt evenly. Put the cucumbers in the refrigerator for 8 hours.
2. Quick salted cucumbers in a jar
Igredienites are designed for a 3 liter jar.
You will need: 1.5 kg of cucumbers, 5 cloves of garlic, half a bunch of green dill, 3 tbsp. coarse salt, boiling water.
Preparation: At the bottom of the jar, fold slightly crushed garlic cloves and herbs. Tamp the prepared cucumbers tightly, add salt, pour boiling water over it and cover with a nylon lid. Swirl the jar gently to distribute the salt evenly. In 12 hours, lightly salted cucumbers will be ready!
3. Lightly salted cucumbers according to an old recipe
Cucumbers are very crispy and delicious.
You will need: 2 kg of cucumbers, 5 cloves of garlic, a bunch of dill, 2 tbsp. salt, 5 black peppercorns, 1 bay leaf, 3 horseradish leaves, 2 liters of water.
Preparation: Soak the cucumbers overnight in cold water, then cut off the ends and place tightly together with the herbs in a prepared container. Boil water with salt and spices in a saucepan. Pour cucumbers with hot brine, cover and leave for a day at room temperature.
4. Lightly salted cucumbers "Fragrant"
After cooking, store the cucumbers in the refrigerator, otherwise they will oxyderate.
You will need: 2 kg of cucumbers, 2 liters of water, 2 tsp. sugar, 4 tablespoons salt, 5 cloves of garlic, 5 umbrellas of dill, 2 leaves of horseradish, 5 leaves of cherry, 2 bay leaves, 2 umbrellas of anise.
Preparation: Rinse the cucumbers, cut off the ends. Place the leaves, herbs and garlic at the bottom of the bowl, then put the cucumbers. Boil water in a saucepan, dissolve salt and sugar. Cool the brine and pour into a bowl. Cover with dill on top, a large lid and put oppression. In a day, the cucumbers will be ready.
5. Lightly salted cucumbers in 2 hours
Oak leaves make the cucumbers thick and crunchy.
You will need: 1 kg of cucumbers, 1 tbsp. coarse salt, half a bunch of dill, 0.5 tsp. red pepper flakes, 2 oak leaves, 4 garlic cloves, 1.5 tbsp. lemon juice, 2 allspice peas.
Preparation: Cut the cucumbers into quarters lengthwise, chop the herbs and garlic. Mix cucumbers with salt, spices, herbs, garlic and lemon juice. Cover the bowl with cheesecloth and leave warm for 2-3 hours.
6. Lightly salted cucumbers in mineral water
To make the cucumbers evenly salted, place them vertically in the container.
You will need: 2 kg of cucumbers, 2 liters of mineral water with gas, half a head of garlic, 4 tbsp. salt, 4 umbrellas of dill, 4 currant leaves.
Preparation: Cut off the tips of the cucumbers, peel and coarsely chop the garlic. Tum the cucumbers, garlic and herbs tightly into the jar. Dissolve the salt in mineral water and pour it into a jar. Send the cucumbers to the refrigerator for 14 hours.
7. Lightly salted cucumbers with mustard
Cutting off the ends of the cucumbers is optional, but it cooks faster.
You will need: 1 kg of cucumbers, 1.5 tsp. sugar, 1 tbsp. salt, 1 tsp. mustard powder, 5 black peppercorns, half a bunch of dill, 4 cloves of garlic, 1 water.
Preparation: Rinse the cucumbers, cut off the ends on both sides, cut into quarters lengthwise. Sprinkle them with salt, sugar, mustard powder and chopped dill. Put the cucumbers in a bowl, squeeze the garlic through a press and pour boiling water over everything. After 12 hours, the cucumbers are ready!
eight.Lightly salted cucumbers with vinegar
Choose cucumbers of the same size, ideally no more than 10 cm!
You will need: 3 kg of cucumbers, 1.5 tbsp. sugar, 3 tbsp. salt, 50 ml of vegetable oil, 50 ml of apple cider vinegar, half a bunch of dill, half a head of garlic, 1 pod of hot pepper.
Preparation: Cut off the tips of the cucumbers, chop the herbs, garlic and hot peppers. Cut the cucumbers into quarters lengthwise, add salt, sugar, oil and vinegar. Pour in herbs, garlic, hot peppers and mix gently. Place the cucumbers in a bowl, cover tightly and leave warm for 4-5 hours.
9. The classic recipe for lightly salted cucumbers
If desired, you can exclude currant leaves.
You will need: 1 kg cucumbers, 1 onion, 1 small carrot, 1 tbsp. salt, 1 tbsp. sugar, 2 tbsp. vinegar, 2 tsp. mustard beans, 5 black and allspice peas, 2 horseradish leaves, 3 black currant leaves, 1 liter of water.
Preparation: Fill the cucumbers with cold water for 2 hours. Cut off the ends and pierce each cucumber in several places. Chop onions, carrots and garlic. Boil water with salt and sugar, add peppercorns, turn off and pour in vinegar.
Put the cucumbers together with herbs, leaves and garlic in a bowl, add mustard seeds, onions and carrots. Pour in hot brine and cover for 10 hours.
10. Lightly salted Georgian cucumbers
It is imperative to wrap the cucumbers, so they will be salted better!
You will need: 2.5 kg cucumbers, 3 tbsp. salt, 1 tbsp. sugar, 30 ml lemon juice, 5 cloves of garlic, 2 tsp. cumin, 0.5 tsp. coriander beans, 1 pod of red pepper, cilantro, dill, 2.5 liters of water.
Preparation: Cut off the tips of the cucumbers, lightly crush the garlic cloves with a knife handle, chop the hot pepper. Fold cucumbers with herbs, garlic and paprika tightly into a jar.
Boil water in a saucepan, add sugar, salt, lemon juice and spices. Pour the brine into the jar, cover with a lid, wrap it up with a warm blanket and leave for two days.
11. Lightly salted cucumbers with sesame seeds and soy sauce
Sesame and spice sauce should be infused for 15-20 minutes.
You will need: 2 kg of cucumbers, 4 cloves of garlic, 3 tbsp. sesame seeds, 4 tablespoons soy sauce, 15 g coarse salt, 2 tbsp. vegetable oil, 20 ml of vinegar, half a bunch of cilantro.
Preparation: Rinse the cucumbers, cut them lengthwise into quarters, sprinkle with salt and leave for 15 minutes. Mix the soy sauce, sesame seeds, vegetable oil, minced garlic, and vinegar separately.
Put the cucumbers together with the cilantro sprigs into a container, add the prepared mixture, mix, cover with a lid and refrigerate for 6 hours.
12. Korean style lightly salted cucumbers
A spicy snack for lovers of Asian cuisine.
You will need: 1.5 kg of cucumbers, 2 carrots, 4 cloves of garlic, 1.5 tbsp. salt, 1 tsp. sugar, lemon wedge, 1 hot pepper pod, 0.5 tsp. coriander beans, 30 ml of vegetable oil, 0.5 tsp. ground black pepper.
Preparation: Cut the cucumbers into cubes, sodium carrots on a Korean grater, chop the garlic and hot peppers. Mix everything in a wide bowl, add salt, sugar, ground pepper, oil, lemon juice and spices. Stir, cover and refrigerate for 5-6 hours.
13. Broken lightly salted cucumbers
Use this recipe to feast on lightly salted cucumbers in half an hour!
You will need: 1 kg of cucumbers, half a bunch of dill, 1 tbsp. salt, 3 cloves of garlic, 1 tbsp. lemon juice.
Preparation: Cut the tips off the cucumbers. Hit the cucumbers with a rolling pin until they crack. Cut them into small pieces, add salt, lemon juice, chopped herbs and garlic. Place the cucumbers in a plastic container, close the lid tightly and shake. In half an hour, the cucumbers will be ready.
14. Lightly salted cucumbers with bread
Bread triggers natural fermentation processes, thus ensuring excellent salting.
You will need: 2 kg cucumbers, 4 cloves of garlic, 4 tablespoons. salt, 1.5 tsp. sugar, 2 cloves, 100 g rye bread, 5 allspice peas, 1 hot pepper pod, 5 dill umbrellas, 2.5 liters of water.
Preparation: Put the cucumbers in a bowl with the dill.Add the bread wrapped in cheesecloth, crushed garlic cloves and finely chopped hot peppers. Boil water separately, add salt, sugar and spices. Pour cucumbers with hot marinade and cover for a day.
15. Hungarian-style lightly salted cucumbers
The result is simply amazing!
You will need: 2 kg of cucumbers, 50 g of salt, 200 g of bread, a bunch of dill, 5 peas of black and allspice, 2 bay leaves, 2 liters of water.
Preparation: Cut off the tips on the cucumbers. Cut the bread and dry in a dry skillet until golden brown. Place a couple of slices on the bottom of the jar, add peppercorns and a little greenery. Then tamp the cucumbers. Top with bread and herbs. Boil water in a saucepan, add salt and bay leaf. Pour the marinade into the jar, cover with a nylon lid and leave for 4-5 days.
16. Lightly salted cucumbers with apples
Choose firm, sweet and sour apples.
You will need: 3 kg of cucumbers, 6 apples, half a head of garlic, a bunch of dill, 2 horseradish leaves, 1 tbsp. black peppercorns, 150 g of salt, 3 liters of water.
Preparation: Cut apples into quarters, remove seeds and stalks. Cut off the tips on cucumbers, disassemble the garlic into cloves and peel. Put the herbs in the prepared container, put cucumbers, apples and garlic on top. Boil water with salt and sugar. Pour hot brine into cucumbers, cover with a lid, put oppression on and let it brew for 48 hours.
17. Lightly salted cucumbers in green sauce
Stir the cucumbers periodically while cooking.
You will need: 1 kg of cucumbers, a bunch of dill, 4 cloves of garlic, 2 tbsp. lemon juice, 20 g salt, 0.5 tsp. sugar, 50 ml of vegetable oil, 2 tbsp. soy sauce, 0.5 tsp. ground coriander.
Preparation: Cut the cucumbers into quarters lengthwise. Grind herbs with garlic, salt, sugar, butter, lemon juice and spices in a blender. Place the cucumbers in a bowl, add the sauce, stir and cover with cheesecloth for 2 days.
18. Lightly salted cucumbers with honey and Adyghe salt
You can buy Adyghe salt in a store or make it yourself - mix ordinary salt, garlic, dried herbs and spices to taste!
You will need: 1 kg of cucumbers, 3 cloves of young garlic, 1.5 tbsp. Adyghe salt, 3 umbrellas of dill, 1 tsp. honey, 1 pod of hot pepper, 1 liter of water.
Preparation: Cut off the tips on the cucumbers, chop the pepper and garlic. Place the cucumbers tightly in a jar, mixed with herbs, garlic and pepper. Dissolve honey and salt in water. Pour the cold marinade into the jar, cover with a lid. Leave the cucumbers warm for two days.
19. Lightly salted cucumbers with ketchup
A very simple but harmonious and delicious combination of flavors!
You will need: 1.5 liters of water, 2 kg of cucumbers, 1 tbsp. salt, 2 tsp. sugar, 80 ml lemon juice, 150 ml ketchup, 5 cloves of garlic, half a bunch of dill, 5 black and allspice peas.
Preparation: Cut the cucumbers into quarters and place in a bowl, add chopped herbs and garlic. Boil water in a saucepan, add sugar, salt, peppercorns and ketchup. Boil for 5 minutes, turn off and pour in lemon juice. Add the marinade to the container with cucumbers, cover tightly and wrap with a warm towel for 2 days.
20. Lightly salted cucumbers with celery and garlic
Celery and garlic give pickles a delicious flavor!
You will need: 2 kg of cucumbers, 2 liters of water, 5 cloves of garlic, 1 hot pepper, 100 g of celery, 3 currant leaves, 3 cherry leaves, 150 g of salt, 3 dill umbrellas.
Preparation: Rinse the cucumbers and cut off the ends. Cut hot peppers in half lengthwise, chop the garlic and celery. Put the dill and leaves on the bottom of the jar, put cucumbers, garlic, celery and hot peppers on top.
Boil water, add salt and cool. Pour cucumbers with brine and leave to ferment for 4 days at room temperature. Then refrigerate for another 2 days.
