Cold soups are cooked all over the world, and there are hundreds of recipes for their preparation. They are vegetable, with the addition of meat, mushrooms or pickles. We've collected 20 of the best recipes for your hot summer days!
1. Cucumber gazpacho
Refreshing and very light!
You will need: 500 g cucumbers, 150 g celery stalks, 2 g mint, 1 tbsp. wine red vinegar, 15 g spinach, 1 tbsp. lemon juice, 1 g chili pepper, 15 g basil, 50 g radish, 10 g chia seeds, crushed ice.
Preparation: Soak the chia seeds in water, cut the radish into rings, peel and rub the cucumbers on a coarse grater. Whisk in a blender all ingredients except the radish and chia with ice. Serve the soup garnished with radishes and seeds.
2. Okroshka on kefir
A classic first course every summer.
You will need: 20 g of boiled peeled potatoes, 1 egg, 20 g of radish, 20 g of cucumbers, 30 g of doctor's sausage, 3 g of green onions, 280 ml of kefir, 2 g of rosemary, 2 g of thyme, 2 g of basil, 10 g of olive oil, 1 l ... kefir 1%, 250 ml. carbonated water, 25 g of granular mustard, 25 g of horseradish, 5 g of salt.
Preparation: Cut all ingredients into thin strips and place on a plate. Combine kefir, mineral water, spices and add vegetables. Garnish with herbs and olive oil.
3. Gazpacho with strawberries
A cold soup that not only refreshes but also drives you crazy with its aroma.
You will need: 600 g of fresh strawberries, 300 g of tomatoes in their own juice, 20 g of stracatella cheese, 60 g of wheat bread, 70 g of celery, 150 g of cucumbers, 100 g of bell pepper, half a red onion, 1 tbsp. olive oil, 1 tablespoon lemon juice, salt, pepper, red paprika, a clove of garlic, microgreen.
Preparation: Dice the bread, garlic and vegetables. Mix and leave to marinate for an hour. Beat the vegetables in a blender until smooth. Serve garnished with a slice of cheese, strawberry wedges and microgreen.
4. Gazpacho with Stracciella cheese

You will need: 200 g of tomatoes, 30 g of celery, 40 g of bell pepper, 5 g of cilantro, 5 g of chili pepper, 20 g of olive oil, 80 g of Stracciella cheese, 3 g of basil, salt.
Preparation: Pour boiling water over the tomatoes, dip them in cold water and peel them off. Beat all the ingredients in a blender. Serve the dish garnished with a wedge of cheese and herbs.
5. Belarusian cold store
Cold soup with summer flavor.
You will need: 6 pcs. beets, 3 cucumbers, 6 eggs, 250 ml. sour cream, a bunch of green onions, a bunch of dill, a couple of parsley sprigs, 4 tbsp. vinegar, 3 l. water, salt, sugar.
Preparation: Boil eggs, beets, remove the peel from the cucumbers, finely chop the greens. Separate the whites from the yolks. Beat the squirrels with beets and cucumbers in a blender or coarsely grated sodium. Put the greens in a bowl and mix together with the yolks.
Combine all the ingredients, fill with water and sour cream. Stir well and serve with toast or baked potatoes.
6. Cold Bulgarian soup "Tarator"
Delicious soup that will take no more than 10 minutes to cook and will refresh you!
You will need: 1 cucumber, 250 ml. kefir, 250 ml. mineral water, a bunch of dill, 1 tbsp. vegetable oil, 2 cloves of garlic, 2 tbsp. fried pine nuts, salt.
Preparation: Grate a cucumber, finely chop the garlic and dill, mix mineral water with kefir. Combine all the ingredients and leave to infuse for 2 hours in the cold. Serve the soup garnished with herbs, cucumber slices and nuts.
7. Cold soup with cream cheese
Well, very creamy taste!
You will need: 500 g of cucumbers, 100 g of processed cheese, 125 ml. cream 10%, a clove of garlic, herbs, salt, pepper, several forest pickled mushrooms.
Preparation: Peel the cucumbers, cut the melted cheese into slices, chop the garlic. Add cream and whisk everything with a blender. Salt, pepper, garnish with herbs, mushrooms.
8. Beet gazpacho
If the tomatoes were not juicy enough and gave little juice, add a couple of tablespoons of broth or tomato juice.
You will need: 1 beet, 3 large tomatoes, a small onion, 1 cucumber, a clove of garlic, a couple of basil sprigs, 1 tbsp. olive oil, 1 tablespoon vinegar or red wine, salt, a quarter of a chili pepper, crushed ice.
Preparation: Boil the beets, peel and cut into slices. Chop tomatoes, onions, garlic, chili, add beets, ice and beat with a blender. Garnish the soup with basil and cucumber slices.
9. Cold almond-garlic cream soup
Classic Spanish soup for the hot season.
You will need: 100 g whole almonds, 100 g white stale bread, 2 cloves of garlic, 100 ml. olive oil, 1 tablespoon wine white vinegar, salt, 200 ml. ice water, green grapes, half a cucumber.
Preparation: Place the almonds in boiling water for 2-3 minutes. Discard in a colander and skin. Soak bread in water for 5 minutes. Gradually whisk nuts, bread, garlic in a blender. Add oil, water, spices. Put the soup in the refrigerator and serve after a couple of hours, garnished with grapes and cucumbers.
10. Cold soup with oatmeal and vegetables
Serve with cucumber and carrot slices - this will add visual flavor to the dish.
You will need: 250 ml. Greek yogurt, 3 tablespoons oatmeal, 40 g broccoli, 40 g green peas, 1 tbsp. chopped dill, salt.
Preparation: Mix yogurt with oatmeal and hide for 3-4 hours in the cold. Boil broccoli and peas for 2-3 minutes. Add vegetables to yogurt and whisk with a blender. Garnish the soup with vegetables.
11. Cold tomato soup
Popular cold soup from southern countries, especially in Italy!
You will need: 460 g tomatoes in their own juice, onions, 2 pcs. petiolate celery, 2 tbsp. olive oil, a couple of drops of Tabasco sauce, 100 g of crushed ice, salt, pepper.
Preparation: Fry chopped onion and celery in a pan until tender. Put tomatoes, fried vegetables, ice, oil and spices in a blender. Whisk until smooth. Chill before serving.
12. Sorrel okroshka on kefir
Unusual taste due to the sourness of sorrel.
You will need: 2 p. water, 600 g fresh sorrel, 5 pcs. boiled potatoes, 5 eggs, 500 g sausages, 400 g cucumbers, 1 liter. kefir 2.5%, a bunch of green onions, a bunch of dill, 200 g of radish, herbs to taste, salt.
Preparation: Boil sorrel in water and set aside. Dice vegetables, eggs, chop herbs and transfer to a saucepan. Add kefir, sorrel broth and spices. Refrigerate for a couple of hours.
13. Pear Parmesan Soup
This soup is like first love - it is impossible to forget!
You will need: 4 pears, 2 cups of pear juice, 5 tbsp. cream 20%, 100 g parmesan, salt, pepper.
Preparation: Cut the pear into cubes and cook in juice for 25 minutes. Let it cool and put it in the cold for 5-6 hours. Add cream, spices and whisk with a blender. Sprinkle the soup with grated Parmesan.
14. Gazpacho with cod liver and shrimps
Choose shrimp of large varieties - they are more meaty and richer in taste.
You will need: 3 large meaty tomatoes, cucumber, bell pepper, a clove of garlic, a few slices of baguette, 1 tsp. lemon juice, 140 g of cod liver, 5 large shrimps, 4 tbsp. olive oil, 1 tbsp. balsamic vinegar, salt, pepper, a pinch of chili, herbs.
Preparation: Pour boiling water over the tomatoes and peel them off. Whisk all the vegetables in a blender, along with the spices. Let the soup cool in the cold for 2-3 hours. Serve with a slice of cod, shrimp and a toasted baguette.
15. Cold Latvian soup "Vasara"
The main difference from similar soups is in pickled beets.
You will need: 2 beets, 300 ml. water, 200 g sausages, 2 eggs, 3 cucumbers, 5 radishes, a bunch of greens, 2 tbsp. mayonnaise, 2 tbsp. vinegar 9%, 2 tsp. salt, 2 tsp. sugar, 2 bay leaves, 3 pcs. carnations, 3 pcs. allspice.
Preparation: Cook the marinade for beets from water, spices, vinegar. Boil the beets and cut into thin slices - cover with marinade, leave for 2 hours.Finely chop vegetables, boiled eggs, sausage, herbs. Combine all ingredients with beetroot and season with mayonnaise.
16. Cold soup with kvass and jellied meat
Unusually delicious and hearty soup!
You will need: 100 g of finished jellied meat with meat, 1 glass of kvass, 1 tbsp. sour cream, 1 tbsp. horseradish, greens.
Preparation: Cut the jelly into cubes and place in a bowl. Mix sour cream with horseradish, pour jellied meat with kvass. Add sour cream sauce to the soup and sprinkle with herbs.
17. Cold herring soup
This soup seems ambiguous until you try it!
You will need: 100 g herring fillet, 1 potato, 1 egg, 1 pickled cucumber, a bunch of dill, 1 tsp. mustard, 2 pcs. green onions, 0.5 l. kefir, salt, pepper.
Preparation: Boil potatoes and eggs, finely chop all the ingredients. Sprinkle with finely chopped herbs, add mustard and stir. Leave to soak for 15 minutes. Serve the soup by spreading the ingredients in bowls and sprinkling with kefir, sprinkle with green onions.
18. Cold vegetable soup with avocado
It is not only tasty, but also healthy!
You will need: 1 avocado, 3 tomatoes, 2 cucumbers, 5 radishes, bell peppers, leeks or green onions, a bunch of herbs to taste, 300-400 ml. chilled broth or mineral water, a couple of drops of Tabasco, 2 tbsp. olive oil, 2 tablespoons balsamic vinegar, salt, pepper.
Preparation: Wash all vegetables, herbs and chop finely. Transfer to a tureen, add broth or mineral water. Add spices and leave in the cold for a couple of hours. Serve garnished with avocado and radish slices.
19. Cold cream soup with beets and apples
It is unlikely that you have ever tasted cold fruit and vegetable soup!
You will need: 1 cucumber, juice of half a lemon, 600 ml. apple juice, 200 g of yogurt, 350 g of boiled beets, salt, pepper, mint.
Preparation: Chop the beets and add them to a blender with half the apple juice and yogurt. Whisk until smooth. Add lemon juice, spices. Grate the cucumber separately and mix with the remaining juice, mint and yogurt. Serve the soup with cucumber dressing.
20. Gazpacho with pesto and cilantro
Any soup will sparkle with completely new flavors if you add pesto to it!
You will need: 400 g of tomatoes in their juice, 1 cucumber, 3 tbsp. rice vinegar, 3 tbsp. soy sauce, 0.5 tsp. red hot pepper, small red onion, 1 tsp. sweet paprika, 2 tablespoons olive oil, 1 tsp. fresh ginger, cilantro, mint, a clove of garlic, croutons.
Preparation: Chop vegetables, herbs and send to a blender with spices. Whisk until smooth. When serving, add a teaspoon of pesto with cilantro to the soup, garnish with croutons.
