Ingredients: 400 ml of milk, 300 ml of 33% cream, 40 g of milk powder, 120 g of sugar, 14 g of corn starch, vanillin.

How to do: Immediately mix the starch thoroughly in 50 ml of milk until dissolved and set aside. Combine all dry ingredients, pour in about a quarter of the milk and stir. Add remaining milk and bring to a boil, stirring constantly.

Stir the starch again, add it to the mixture, reduce the heat and stand for another 2-3 minutes on the stove to thicken the mass. Pass it through a sieve and put it to cool in a bowl of ice. First, stir the workpiece constantly so that it does not become covered with a milk film. Put it in the freezer after 5 minutes.

During this time, beat the cream in a large bowl with a mixer and then pour in the cooled milk mixture. Put the ice cream back in the freezer and stir it every 30-40 minutes for the first 3-4 hours. Leave the ice cream there for another 3 hours alone - and it's done!

How to do: Pour the milk and cream into a saucepan and add the seeds and vanilla pod there. If you don't have a stick, you can replace it with confectionery extract. Bring the mixture to a boil, discard the pod and slowly add it to the yolks, grated with sugar.

Stir the mixture constantly while combining to prevent the eggs from curdling from the heat. Pour the workpiece back into the pan, simmer until thick, cool and send the ice cream to the freezer for 6 hours.

How to do: Grind the pistachios in a blender or coffee grinder to flour. Beat the egg with sugar until smooth and, without stopping beating, pour in about half of the warm cream. Kill the rest separately in a thick foam and connect the masses to each other. Gently add the pistachios, mix, pour the ice cream into the container and leave in the freezer for 5 hours.
