Beef liver cutlets are very nutritious and healthy. They can be served with mashed potatoes, pasta, porridge, or simply with bread and vegetables. And recipes for liver cutlets for the most part do not require either financial or time costs!
1. Liver cutlets in sour cream
Delicious and simple beef liver cutlets with amazing creamy aroma.
You will need: 650 g beef liver, 3 tbsp. l. oatmeal, 200 ml sour cream, 110 ml boiling water, 1 onion, a pinch of ground nutmeg and rosemary, 50 g of basil, 1 tbsp. l. flour, spices and salt.
Preparation: Pour oatmeal with boiling water, liver slices with spices and salt, half of the basil, puree in a blender. Send the swollen flakes into the liver dough, put the chopped onion fried in oil and sifted flour there. Fry the cutlets quickly on both sides and immediately transfer to a deep mold. Pour in the sauce made from water, sour cream, remaining basil, nutmeg and rosemary, bring to readiness in the microwave.
2. Beef liver cutlets with nuts and cilantro
Instead of mayonnaise, you can also take sour cream or heavy cream, in any case, the result will delight you!
You will need: 0.5 kg of raw beef liver, 120 g of walnuts, 60 g of flour, 2 eggs, 3 onions, 140 ml of mayonnaise, a pinch of hops-suneli, 0.3 bunch of cilantro.
Preparation: Pass the pieces of liver and onion slices twice through a meat grinder with a fine grid, beat in the eggs, add mayonnaise, cilantro and spices. Nuts, crushed into small crumbs together with flour, gradually mix into the liver mass, reaching the consistency of thick sour cream. Fry in vegetable oil or melted lard.
3. Beef liver cutlets with semolina
Lush and airy ordinary beef liver cutlets make semolina added to minced meat.
You will need: 450 g frozen beef liver, 2 onions, 3 garlic cloves, 7 tbsp. l. semolina, a pinch of baking soda, bread crumbs.
Preparation: Fry chopped onions in oil, puree in a blender along with pieces of liver and garlic, add spices and semolina. Put the semi-liquid dough on a plate with breadcrumbs, roll on all sides and immediately transfer to a preheated pan, fry until a delicious golden brown crust is formed.
4. Beef liver cutlets with carrots and onions
For this recipe, choose juicy, brightly colored and sweet carrots, if you don't find one, you can add a little sugar to the minced meat.
You will need: 800 g beef liver, 2 eggs, 4 tbsp. l. mayonnaise, 2 large carrots, 6-7 cloves of garlic, 6 tbsp. l. flour, 2 onions.
Preparation: Pieces of onion, liver, carrots and garlic were ground in a meat grinder. Using an immersion blender, bring the consistency of the liver-carrot mass to a puree state, add eggs, mayonnaise, flour and spices. Fry thin cakes for three minutes on both sides.
5. Beef liver cutlets with ginger
Serve boiled or baked potatoes and fresh vegetables for garnish with liver cutlets with ginger.
You will need: 0.5 kg beef liver, 1 raw egg, 2 tbsp. l. semolina, 1 onion, 2-3 cloves of garlic, 2.5 tbsp. l. mayonnaise or cream, 1 cm of fresh ginger root, spices.
Preparation: Grate onion, ginger root and garlic, transfer to the liver, ground in a meat grinder. Pour the rest of the ingredients there, adjust the taste with spices, leave to swell for about 15 minutes. Fry thin liver cutlets from the minced meat obtained in the usual way.
6. Liver cutlets with chicken fillet
Adding chicken breast to chopped beef liver cutlets makes them taste more tender and softer.
Preparation: 450 g chicken fillet, 1 carrot, 1 tbsp. l. grated fresh ginger, 600 g of beef liver, 2 eggs, 3 tbsp. l. sifted flour, 3 cloves of garlic, 0.3 tsp. dried thyme (thyme).
Preparation: Hold the liver and meat for about 30-40 minutes in the freezer, then cut into small cubes, add the carrots grated on a coarse grater, beat in the eggs, add ginger, flour, thyme and spices. Chefs recommend frying liver and chicken cutlets in olive oil.
7. Beef liver cutlets with rice
You can put not only semolina in minced meat, but also rice. Be sure to cook this unusual version of liver cutlets!
You will need: 1 kg of beef liver, 200 g of rice groats, 400 g of wheat flour, spices, 1 onion and 1 carrot each, 1 small head of garlic.
Preparation: While the rice is cooking, mince the onion, liver, garlic and carrots twice through a meat grinder. Mix with cooled rice porridge, add flour. Cook in oil until golden brown.
8. Liver cutlets with smoked brisket
Delicate, juicy and savory in taste, cutlets are obtained from beef liver, if you add a little chopped smoked brisket and couscous grits to the minced meat.
You will need: 550 g of beef liver, 250 g of smoked brisket, 130 g of couscous groats, 1 egg, 2 onions, 2 cloves of garlic, 0.25 tsp. ground paprika, spices.
Preparation: Take small couscous groats, brew it with a glass of boiling water, and then, together with onions, pieces of smoked brisket, liver and garlic, pass through a meat grinder two or three times. Beat the egg into the mass, add spices and paprika, it is better to fry in olive or coconut oil.
9. Beef liver cutlets with potatoes
Liver cutlets with potatoes can be served as a separate dish for vegetable salads.
You will need: 450 g of potatoes and beef liver, 4 tbsp. l. white sesame seeds, 2 tbsp. l. flour, 1 tsp. smoked paprika, 2 cloves of garlic.
Preparation: Boil the peeled potatoes until half cooked, grate on a fine grater or, together with the liver, pass twice through a meat grinder. Stir the remaining ingredients into the liver-potato mince, form flat round cutlets with wet hands, brush with vegetable oil and bake in the oven.
10. Liver cutlets with oatmeal
This recipe can be used to make delicious and aromatic cutlets from fresh or frozen beef liver.
You will need: 800 g beef liver, 3 eggs, 2 onions, 7-8 tbsp. l. oatmeal, 2 tbsp. l. flour, 4 tbsp. l. sour cream, 1 bunch of fresh dill, spices.
Preparation: Pass the pieces of liver through a meat grinder with a coarse grate, finely grated sodium onions and additionally purée with a blender, add garlic, flour, eggs, Hercules oatmeal soaked in boiling water, spices and chopped dill. Fry in oil on both sides for a few minutes.
11. Steamed beef liver cutlets with cheese
In a double boiler, they cook completely non-fatty, tender and fragrant dietary liver cutlets, which are suitable for baby food, but adults will also like it!
You will need: 450 g of beef liver, 1 glass of fresh milk, 1 onion, 45 g of hard cheese, salt.
Preparation: Pour the pieces of liver with milk for an hour, grind in a meat grinder, transfer to a bowl with grated onions, puree everything together with a blender. Pour in the crushed cheese, pour two tablespoons of minced meat into suitable molds, steam.
12. Warsaw-style beef liver cutlets
In the original recipe, Warsaw cutlets are made from chicken liver, but beef is no less tasty.
You will need: 0.5 kg of beef liver, 180 g of salted lard, 5 cloves of garlic, 1.5 large onions, 480 ml of sour cream, 3 sec. l. flour, 0.5 tsp. baking soda, spices.
Preparation: Cut the skin off the bacon, cut into bars and pass through a meat grinder along with the liver and sautéed onions. Stir in the rest of the ingredients, bake the cutlets in the oven or fry in a pan.
13. Greek people with beef liver
If there is a little buckwheat porridge left in the pan, and there is a piece of beef liver in the refrigerator, then you can quickly cook delicious liver-buckwheat cutlets for dinner!
You will need: 350 g of buckwheat porridge and fresh beef liver, 1 egg, 1 onion, 4.5 tbsp. l. flour and spices.
Preparation: In the minced beef liver, grated onion and beaten egg, stir in flour and cooked buckwheat porridge. Season with salt and spices, sculpt round tortillas, fry in oil. Serve with any side dish and sauce.
14. Beef liver cutlets with vegetables
Cook potatoes and carrots in their "uniforms" and use a blender with the addition of warm milk to turn them into puree.
You will need: 600 g beef liver, 4 boiled carrots, 2 boiled potatoes, 1 onion, 4-5 tbsp. l. warm milk, 1 egg, 3 tbsp. l. sifted flour, spices and salt.
Preparation: Mix vegetable puree with milk with an egg, spices, onion and liver ground in a meat grinder. Adjust the thickness of the minced meat with flour, and the taste with the addition of spices. Spoon the thick liver and vegetable mixture into a skillet and fry until a delicious golden brown crust is formed.
15. Liver patties with turmeric
These cutlets are baked in the oven, it is only important to cover them with foil so that the dish does not get too dry.
You will need: 0.7 kg of beef liver, 2 onions, 65 g of oatmeal, 2 eggs, 1 tsp each. ground turmeric and black pepper, 1.3 tsp. salt.
Preparation: Add oatmeal, onion, turmeric and spices, yolks swollen in boiling water to a bowl with ground liver. Whisk the egg whites into a cool foam with a pinch of salt, gently mix into the minced meat. Spoon the small tortillas onto a baking sheet and place in the oven to bake.
