A spicy sweet and sour sauce turns any ordinary dish into a culinary masterpiece. It is served with meat, fish, vegetables or pasta. We have collected for you recipes for a wide variety of sauces from oranges, cherries, cherry plums, even from viburnum and apricot jam!
1. Sweet and sour sauce from McDonald's
Perhaps it is this type of sweet and sour sauces that are the most popular all over the world. At home, it is prepared from peach and apricot confiture.
You will need: 0.5 cups apricot and peach jam, 4 tsp. vinegar, 2.5 tbsp. l. corn syrup, 1.5 tsp. potato starch, 1 tsp. soy sauce, 0.5 tsp. sea salt, 0.5 tsp. ready-made mustard, 2 tbsp. l. filtered water, 1 clove of garlic.
Preparation: Combine peach and apricot jam in a saucepan, stir with corn syrup, soy sauce, vinegar, mustard, garlic, starch and salt. Beat with a blender and cook for 6-9 minutes, gradually adding water.
2. Chinese sweet and sour sauce
Roasted duck or pork will take on new flavors when served with a sweetish tomato-orange sauce.
You will need: 200 ml orange juice, 3 tbsp. l. tomato paste, 45 g of corn flour, 280 ml of purified water, 3 tbsp. l. soy sauce, 60 ml of rice vinegar, 90 g of sugar.
Preparation: Whisk lightly orange juice with sugar, tomato paste, vinegar, soy sauce. Add starch diluted in water, bring to a boil. Serve hot.
3. Sweet and sour pineapple sauce
This original sauce made from ketchup, orange juice and juicy pineapple pieces is served with meat or fish.
You will need: 0.5 kg of canned pineapple cubes, 1 tsp. soy sauce, 0.75 cups of orange juice, 40 g each sugar and ketchup, 3 tbsp. l. pineapple juice, 1 tbsp. l. lemon juice, 2 tbsp. l. cornstarch, 70 ml of water.
Preparation: Put a mixture of orange, pineapple and lemon juices, soy sauce and ketchup to boil, when the mass becomes well warm, add starch and sugar dissolved in water. Remove from heat, pour pineapple slices, serve hot.
4. Sweet and sour cherry sauce
The sauce turns out to be thick and rich, it goes well with baked or fried meat.
You will need: 150 ml of dry red wine, 160 g of frozen pitted cherries, 2 tbsp. l. water, 1 tbsp. l. butter, 1 tbsp. l. sugar, 1 tbsp. l. potato starch.
Preparation: Heat the wine in a saucepan, pour in the water with starch, as soon as it begins to thicken, add the cherry with juice, sugar and butter. Boil until the sauce is smooth, but should not boil!
5. Spicy sweet and sour sauce
A versatile sauce that will equally well emphasize the taste of meat, fish, vegetables and seafood. They have been preparing it since the days of Ancient Rus!
You will need: 0.6 l of filtered water, 0.4 kg of sugar, 2 tbsp. l. salt, 135 ml vinegar, 4.5 tbsp. l. potato starch, 13 cloves of garlic, 7-8 hot pepper pods.
Preparation: Peel the chili pods from the stalks and seeds, grind in a blender along with the garlic. Put the hot pasta in a ladle, add vinegar, water, salt and sugar, boil. Pour in the potato starch diluted in water, tom on low heat for three minutes.
6. Sweet and sour lingonberry sauce
This sauce is very popular in Sweden, it is cooked in large portions and harvested for the winter. Served with lamb, pork or beef dishes.
You will need: 500 g fresh or frozen lingonberries, 1 orange, 1 onion, 3 tbsp. l. bee honey, 100 ml of red wine Isabella, 1 tbsp. l. olive oil.
Preparation: In a cast-iron cauldron, fry the onions in olive oil, add lingonberries, orange pulp puréed in a blender and zest, heat for 5 minutes.Put honey in the sauce, cook for another 12 minutes, then pour half of the mass into a separate bowl, grind with an immersion blender and return it back to the cauldron. Pour in wine, remove from heat in 13-14 minutes.
7. Sweet and sour mango sauce
Delicious sauce made from mango pulp and lime juice for kebabs or baked chicken.
You will need: 2 ripe mangoes, 1 tsp. lime juice, 160 ml of water, 1 tbsp. l. potato starch, 0.5 tsp. ready-made seasoning for barbecue, 2 pinches of ground coriander, 1 pinch of oregano, 1 tsp. Sahara.
Preparation: Pour the finely chopped mango pulp with water and lime juice, add spices, put on fire. Tomi on the minimum power of the stove until the mango softens, puree with an immersion blender, adding starch diluted in water.
8. Sweet and sour cranberry sauce
Boiled, fried or baked pork will instantly be eaten by guests if you put cranberry sauce next to it.
You will need: 200 g sugar, 360 g cranberries (fresh or frozen), 1 cup purified water, 3 tbsp. l. orange juice, 1 tbsp. l. cognac or brandy.
Preparation: Mix well all the ingredients specified in the recipe, cook on the stove under a lid for 20-25 minutes. The cranberries should be boiled, turning the mass into a homogeneous thick sauce. Put it in glass jars, keep in the refrigerator.
9. Sweet and sour citrus sauce
Orange sesame sauce can be served with meat dishes or used as a marinade for kebabs, chicken and turkey.
You will need: 1 ripe orange, 0.5 lemon, 145 ml of aromatic olive oil, 1 tbsp. l. sesame seeds, 3 tbsp. l. mustard beans, 0.3 chili peppers, 0.5 tsp. salt.
Preparation: Squeeze juice from lemon and orange, mix with mustard and olive oil, beat with salt and spices. Add sesame seeds and finely chopped chili peppers.
10. Sweet and sour viburnum sauce
A bunch of viburnum can be easily turned into a delicious sauce with the aroma of cinnamon and citrus for meat dishes.
You will need: 320 g of viburnum berries, 1 orange, 1 tbsp. l. sugar or honey, 0.5 tsp. ground cinnamon.
Preparation: Boil Kalina for 7 minutes, grind through a sieve, mix with sugar and diced orange along with the peel. Boil everything together until softened, then add cinnamon and chop in a blender.
11. Sweet and sour plum sauce
For this recipe, you can use cherry plum or any other variety of unsweetened plums.
You will need: 3 kg of plums, 950 g of sugar, 1 sachet of dry adjika, 2 tsp. ground coriander, 1 chilli pod, 2.5 heads of garlic, 4 tsp. salt.
Preparation: Remove the seeds from the plums, cook over low heat until the juice is released, grind through a sieve. Boil the plum puree for 18 minutes, add chopped pepper, add coriander, adjika, sugar and salt. After boiling for 15 minutes, squeeze the garlic into a saucepan with sauce.
12. Apple sweet and sour sauce
Foodies say that sweet and sour applesauce sauce is the perfect seasoning for baked chicken wings.
You will need: 1 large onion, 2 apples, 6 cloves of garlic 1 tsp. 70% vinegar, 1 tsp ground chili, 4 tbsp. l. sugar, 2 pinches of cinnamon, 0.3 tsp. salt, 25 ml of vegetable oil, 20 g of butter, 110 ml of water.
Preparation: Pour the apple pulp without peel and seeds with water, vinegar, vegetable oil and melted butter, bring to a boil. Pour in finely chopped onions and garlic, carcasses until softened. Add spices and after 5-6 minutes whisk with an immersion blender. Serve warm with poultry dishes.
